Green Coconut Curry
Who loves a good curry? I’m going to call this ‘Cheat’s Green Coconut Curry’ because it’s so ridiculously easy and super quick to make ~ aka. the perfect week night dinner in a rush.
When we’re busy, stressed and flat out with uni/work/school/life it’s easy to sometimes put food on the backseat and just eat whatever’s easiest. But remember what you fuel your body with has such a big impact on how you feel + function ~ that makes it even MORE important to make sure you’re still giving yourself wholesome, balanced and nourishing meals when you’re stressed out!
That’s why I like to make the nourishing option, the EASY option too!
This recipe makes 1 serving.
Ingredients:
1 tbsp green curry paste
1 spring onion
2 cups your choice of green veggies (I used broccoli, zucchini + pak choy)
Juice of half a lime
1/2 can white beans, drained
1/3 cup natural coconut yogurt
Basmati rice, to serve
Method:
Chop your veggies!
Heat a non-stick pan and add veggies (except pak choy) and curry paste. Sauté with a splash of water until just soft.
Add pak choy, beans and lime juice, and cook until greens are just wilted.
Stir in coconut yoghurt. Heat until warmed through.
Serve with rice, fresh lime and a sprinkle of chilli flakes!!
