Choc Gingerbread Copycat Clif Bars
Looking for a wholesome, gingerbread spice filled, yet simple snack for the not just the festive season, but any time of the year? Look no further!
These bars were inspired by the very popular Clif bars, but taste even better in my opinion! Packed full of fibre, high quality carbs, healthy fats and plant protein, they’re not only delicious but energising and satisfying. Perfect for taking on the go too!
I am obsessed with all things gingerbread anyway, but the chocolate chunks just make these even better. And no baking is required!

Ingredients:
1 cup (150g) pitted dates
1 cup (100g) oats
1 cup (30g) puffed brown rice
2 tbsp oat flour
40g vanilla plant protein powder (see Notes)
1-2 tbsp Blackstrap molasses
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
1 tsp finely grated orange zest (optional, but recommend!!)
50g peanut or almond butter
1 tsp vanilla extract
1/2 cup unsweetened almond milk
50g dark chocolate, chopped
Method:
Soak dates in boiling water for 15 minutes to soften, then drain and blend into a paste.
Line a tin with baking paper.
Combine all ingredients into a bowl and mix well to combine, adding a little extra milk if needed.
Press firmly into prepared tin and place in the fridge for at least a few hours to firm.
Once firm, slice into bars!
Notes:
The protein powder can be swapped for oat flour if you prefer.
I recommend storing these in a sealed container in the fridge for up to a week. You can also freeze them!
I sliced these into 6 bars.
