I Tried Califia Farms Unsweetened Almond Milk and This is What I Thought!
In my opinion, there’s no better way to start the day than with a wholesome, creamy bowl of porridge. Am I right, or am I right?
Breakfast porridge is not only an energising, filling and delicious start to the day, but it’s also a really great way to use up leftover cooked grains, like brown rice, buckwheat and quinoa. I’ve long been trying to perfect my brown rice porridge recipe, and I’m very pleased to say that I’ve finally done it!
The secret, you ask? It’s Califia Farms almond milk.
I recently discovered Califia Farms Unsweetened Almond Milk in the fridge at my local Coles supermarket and decided to give it a try. They’re now available not only through Woolworths and Coles, but also nationwide through independents, like your local IGA.
Safe to say, I’m very glad I did pick up a bottle of Califia Farms, because using it to cook my brown rice porridge resulted in the creamiest, most heavenly bowl of porridge I ever did make!
Beside the delicious taste and silky smooth, creamy texture, what I also love about Califia Farms Unsweetened Almond Milk, is that there is absolutely no added sugar, made from wholesome ingredients and whole blanched almonds, and is fortified with calcium. Just one cup contains 1/3 of our daily calcium requirements!
Apart from this porridge, I’ve been using Califia Farms Unsweetened Almond Milk in my smoothies, baking, any recipes (such as curries and pasta sauce) that call for plant milk, and just on it’s own with a touch of cinnamon and cacao. As you can tell, I’m totally hooked.
Enough rambling from me and let’s get to the recipe. Fresh strawberries, homemade strawberry compote and coconut yoghurt just take this breakfast to the new level, but you could add any toppings that you fancy. It also makes a great dessert, served chilled in individual jars!

Ingredients:
1 cup brown rice, cooked (or you can use brown rice flakes!)
1/2 cup water
1/2 tsp vanilla bean or extract
1 ripe banana
A big handful of fresh strawberries
1 heaped tbsp coconut yoghurt
1 tsp hemp seeds
Method:
Add the brown rice, Califia Farms Unsweetened Almond Milk, water, vanilla and half the mashed banana into a pot and bring to simmer. Then cook, stirring for about 15-20 mins or until all the liquid has been soaked up by the rice. You might need to add a bit more milk depending on the rice you use, the end result should be a sticky, creamy porridge texture!
Meanwhile, to make the strawberry compote, chop 3-4 strawberries and simmer in a pan for 5-10 minutes until they reach a ‘jammy’ consistency.
Spoon into a bowl and top with the rest of the banana, fresh strawberries and strawberry compote, coconut yoghurt and hemp seeds.

This recipe makes one serve.
If you make this porridge the night before, or have leftovers, store in the fridge in a bowl or glass jar/container for up to 2 days.
This porridge is also delicious eaten cold as a creamy rice 'pudding'.
