Lupini Burgers with Cashew Mozzarella

Lupini beans! Have you heard of them?

Lupini beans are a legume with a very impressive nutritional profile, being higher in protein and lower in carbohydrates than most other legumes. Just 100g of these beans will provide 16g of plant protein!

They’re also a great source of magnesium, iron, calcium, potassium, dietary fibre and antioxidants. Plus, they taste great! What’s not to love?

I’ve used them to make a delicious, protein-packed burger patty, served with a creamy homemade cashew mozzarella. A favourite filling for sandwiches, burgers and wraps, but also great for taking salads and nourish bowls to the next level.

This recipe makes enough for 2-3 serves.

Ingredients:

For the burgers

  • 150g zucchini

  • 1 small brown onion

  • 200g lupini beans, drained and rinsed

  • 2 cloves garlic

  • 2 tbsp flaxmeal

  • 1/2 tsp turmeric

  • 1 tsp cumin

  • Handful of fresh parsley

  • 1/2 tsp salt

  • Juice of 1/2 a lemon

  • Black pepper, to taste

For the mozzarella

  • 100g cashews, soaked

  • 1 cup water

  • 2 tbsp psyllium husk

  • 2 tbsp lemon juice

  • 1/2 tsp sea salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 2 tbsp Nutritional yeast

Method:

  1. The mozzarella needs to be made a few hours in advance, if not the day before to give it time to firm up. Combine the psyllium with the water and leave to soak for 15 minutes to form a gel.

  2. Then add remaining ingredients with the psyllium gel to a blender and blend until super smooth.

  3. Transfer to a ramekin and smooth down firmly, then place in the fridge to set for 2-3 hours or more.

  4. For the burgers, chop onion and zucchini, then add all ingredients into a food processor and pulse until the mix comes together and is almost smooth.

  5. Form into patties and then either bake, by placing on a baking paper lined tray and baking in a pre-heated oven at 200°C for 20 minutes or until golden, or pan fry until golden on both sides.

  6. Serve patties with slices of mozzarella, fresh tomato and black pepper, with your choice of crusty bread or burger bun.

Notes:

  • You can use canned or jarred lupini beans, or cook them from dried.

  • Both the patties and mozzarella are delicious additions to bowls and salads, or as fillings for wraps, burgers and sandwiches!
