DIY Bircher Mix
You all know just how much I LOVE Bircher muesli (how Swiss of me!!), so of course I have to share my own Bircher mix with you. I love this one because it turns out a little different each time and is super versatile. You can use whatever combinations of nuts, seeds and dried fruit that you like and have in your pantry!
It’s filling and satisfying, packed full of fibre, iron, zinc, magnesium, healthy fats, plant protein and so much more nutrient goodness. I love soaking it in vegan yoghurt and/or plant milk, then pairing it with fresh fruit (grated apple, chopped banana and berries is my OG fave!) for a wholesome and very very delicious breakfast or snack.
Make it in bulk, keep it in your fridge and thank me later!!
Ingredients:
1 cup buckwheat
1 cup gluten free oats (you can also do quinoa flakes or a mix!)
1/4 cup chia seeds
1/4 cup flaxseeds (also known as linseeds)
1/2 cup other seeds of choice (pumpkin, sunflower, hemp, sesame…)
1/2 cup nuts (almonds, walnuts, macadamia, cashews…)
1/2 cup coconut flakes
1 cup dried fruit (sultanas, currants, dried mango, goji berries)
1-2 tbsp spices of choice (cinnamon, maca powder, ground ginger)
Method:
Combine all ingredients in a bowl and toss to mix.
Transfer to a glass jar and store in the fridge. That’s it!
Notes:
To make this Bircher mix extra crunchy and digestible, soak everything overnight and then dehydrate for 12 hours or until completely dry and crunchy. I have a dehydrator from Froothie (my discount code is NINA10).
Serving suggestions:
Soak Bircher mix in plant milk overnight, then in the morning, top with your choice of fresh fruit, nut butter, vegan yoghurt etc!
Mix a few tbsp Bircher mix into vegan yoghurt and allow to soak and thicken for a few hours. Top with fresh fruit.
Use to sprinkle on top of smoothie bowls or yoghurt bowls and parfaits.
