Fairy Bread Bliss Balls
I had some leftover hundreds and thousands (aka. sprinkles!) in my cupboard, so I thought I’d create a fun little snack recipe to brighten up these quarantine days.
Note: These actually taste like cake batter!! And make a really great snack to boost energy levels and give you a bit of childhood fairy bread nostalgia.
Packed with plant protein and good quality complex carbs, these make a great pre or post training snack too. Super versatile and easy to make, there’s nothing not to love!!
Ingredients:
150g pitted dates
50g rolled oats or buckwheat
50g cashews
100g vanilla plant protein powder (I used Switch Nutrition Vanilla Bean, code is NINA10)
1 tsp vanilla extract
Hundreds and thousands, to roll
Method:
Soak dates in boiling water for 10 minutes to soften, then drain.
Add oats and nuts to food processor and blend to a coarse flour.
Add dates, vanilla and protein, plus about 1/4 water and blend to form a dough. You may need to add a little more water to get the mix to come together so you can roll it into balls!
Roll into golf ball sized balls and coat in hundreds and thousands. Freeze for at least 2 hours to firm, then store in fridge or freezer.
Notes:
Cashews can be swapped for any other kind of nut or seed, or more oats.
