Crispy Tofu Nuggets

Okay wow. These tofu nuggets seriously give chicken nuggets a real run for their money!!

I wanted to recreate a healthy version of a plant based chicken nugget using tofu, with the same golden crunchy batter and flavours of your typical nuggets…perfect for dipping in tomato sauce, putting in wraps or tacos, or of course in a typical nourish bowl.

A family friendly, protein packed and absolutely delicious meal. Very impressed with myself right now!

This recipe serves 2.

Ingredients:

  • 200g extra firm tofu

  • 30g brown rice flour

  • 1/2 tsp poultry seasoning (see Notes)

  • 1 tsp Dijon mustard

  • 1/4 cup unsweetened plant milk

  • 2 tbsp nutritional yeast

  • 30g cornflakes

  • 1/4 tsp salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp dried oregano

  • 1/4 tsp cayenne pepper

  • 2 tsp extra virgin olive oil

Method:

  1. Combine flour, poultry seasoning, mustard and milk in a shallow bowl to form a smooth batter.

  2. In a separate shallow bowl, crush cornflakes into a coarse meal, then combine with spices, salt and nutritional yeast.

  3. Cut tofu into cubes, then first dip in batter, then cornflake mixture to crumb.

  4. Heat olive oil in a pan and cook tofu nuggets until golden, flipping so all sides get nice and crispy!

Notes:

  • Poultry seasoning is a spice mix which contains . I got mine from iherb.com from the brand Simply Organic. My code GDF941 will get you a discount!

  • You could also bake these in an oven until golden if you prefer, however they definitely taste best as above!
