Vegan Salmon Rice Bowl
My take on the ‘salmon rice bowl’ that’s been all the rage lately on Instagram and TikTok, but make it vegan of course!
I mean, it’s basically just a sushi bowl…but I am SO here for it.
Super quick and easy to throw together, so you get all the sushi goodness without the actual effort and mess of rolling sushi.
High protein, a great source of iodine, loads of veg, packed full of flavour, and just an all round nourishing, balanced and filling meal.
This recipe serves 1.
Ingredients:
100-150g smoked tofu (see Notes)
1/3 cucumber, diced
Handful of baby spinach, chopped
1/2 an avocado, diced
Vegan mayo
Sweet chilli sauce
Wasabi
Leftover rice of choice, I used Basmati
1-2 nori sheets, sliced into quarters
Method:
Grate your smoked tofu using a coarse grater.
Assemble bowl with rice, spinach, cucumber, tofu and avocado. Drizzle with mayo, sweet chilli sauce and wasabi.
Serve with your nori sheets!
Notes:
The smoked tofu is absolutely DELICIOUS and is what gives this bowl the ultimate ‘salmon’ vibes. You can buy it, or make your own by placing sliced firm tofu in a container, cover with 1-2 tbsp soy sauce/tamari and 1-2 tsp liquid smoke. Then leave to marinate overnight!
Feel free to swap or add any extra veggies that you like to this bowl.
