Choc Chestnut Baked Oats
I’m a little bit (read: very) homesick at the moment, so making all the foods that remind me of Switzerland!
In Winter you can buy freshly roasted chestnuts on the streets and they are the best thing ever! Chestnut cakes and dessert are also very popular over there. Here, most people don’t even know what they are.
Some chestnut facts: They are a nut, but unlike most other nuts are actually very low in fat and high in complex carbohydrates and fibre, so more like a starchy vegetable in terms of nutrition!!
Absolutely DELICIOUS paired with chocolate!
This recipe serves one.
Ingredients:
2/3 cup oats
1 ripe banana
3/4 cup plant milk of choice
1/2 tsp baking powder
1 tbsp cacao powder
2 tbsp vanilla or choc plant protein powder
Fresh strawberries
For the chestnut purée:
1 cup pre-cooked peeled chestnuts (see Notes)
1/3 cup plant milk
1 tsp vanilla extract
2 tbsp sweetener of choice
Method:
Add chestnuts to a pot, covered with water, and simmer for 15 minutes to soften.
Drain liquid, then add chestnuts, milk, vanilla and sweetener to a blender or food processor and blend until super smooth. You may need to add a touch extra liquid!
To make the oats, add oats, 1/2 the banana, baking powder, milk, cacao and protein to a blender and give it a 2 second blend.
Pour into a bowl and bake in the air fryer at 200°C for 10 minutes (or oven for 20 minutes).
Top oats with remaining banana, strawberries and a big dollop of chestnut purée!
Notes:
You can use any pre-cooked chestnuts! I had fresh ones which I roasted, but you could also use frozen or from a jar.
For the sweetener you can use any type of sugar, erythritol, stevia or maple syrup.
