PB & J Baked Oats
I have been absolutely obsessed with baked oats recently. In fact, I think I could live off baked oats forever and be pretty content.⠀⠀⠀⠀⠀⠀⠀
If you haven’t tried this filling, wholesome and delicious high protein breakfast that literally tastes like cake, you’re missing out!
The peanut butter and strawberry jam combination is definitely up there with my favourites, so a permanent spot on the blog was very much needed.
This recipe serves one.
Ingredients:
1/2-2/3 cup oats
1/2 tsp baking powder
1 scoop vanilla or caramel plant protein
1 ripe banana
2/3 cup fortified plant milk
1 heaped tbsp nut butter
Handful of strawberries
Spoonful of strawberry jam, I used homemade!

Method:
Combine the oats, baking powder, protein, milk and half the banana in a blender.
Give it a 2 second blend to combine, then pour 3/4 of the batter into a heat proof bowl/container.
Add a dollop of nut butter in the centre, then cover with remaining batter.
Top with the rest of sliced banana. Bake in air fryer at 200°C for 10 minutes (or bake in the oven for 20-25 min)
To serve, top with strawberries and jam!
