Vegan Pfeffernüsse
Such an iconic Christmas time treat in Germany. If you haven’t tried them, they’re basically little gingerbread domes with crisp sweet glaze around them.
The perfect amount of peppery ginger spice and sweetness, and even more perfect paired with a mug of hot choc or milky tea.
If there’s one thing you make this pre-Christmas time, make it these!!
This recipe makes about 9.
Ingredients:
140g plain or spelt flour (GF if needed)
1/4 tsp bicarb soda
40g vegan butter or coconut oil
20g blackstrap molasses
40g rice malt syrup
1 tbsp gingerbread spice mix
20g brown sugar
Glaze:
100g icing sugar
1 tbsp cornflour
25g lemon juice
Method:
Combine flour, sugar, spice mix and bicarb soda in a bowl.
Mix in syrup, molasses and butter to form a dough. Shape into a ball, cover and leave to chill in the fridge at least 2 hours.
Preheat oven to 170°C and line a tray with baking paper. Form about equal sized 9 balls from the dough and place on tray, pressing them down into some shapes.
Bake about 12 minutes until golden, then allow to cool completely.
To make the glaze, mix all ingredients together until completely smooth. Once cool, brush with glaze and leave to set before eating!
Notes:
Gingerbread spice mix (Lebkuchengewürz) is a mix of aniseed, cinnamon, ginger, coriander, nutmeg, cardamom and cloves. It can be store bought or homemade using the recipe in my Self Made Ebook.
Store in a sealed tin for up to a week.
