Creamy Lemon & Dill Pasta
You need to try this one. Kind of an accidental creation when I was in a bit of a rush, but it sure turned out SO delicious that I just had to snap a quick photo to share the recipe with you all!
The secret sauce ingredient: hummus!!
Hummus is not just for dipping and spreading, but also makes a delicious, creamy pasta sauce when thinned out. Next time you make a tomato based pasta dish, try stirring a tbsp or two of hummus into the sauce just before serving for a deliciously creamy finish!
Such a filling, tasty and quick lunch or dinner.
This recipe serves 2.
Ingredients:
2 stalks spring onion, sliced
1 bunch asparagus, chopped
1 small zucchini, chopped
A handful of broccoli florets, chopped
2 cloves garlic, minced
200g firm tofu, diced
1/4 cup hummus, homemade or store bought
2-3 tsp tamari or soy sauce
1 tsp dried dill
Large handful of spinach
Squeeze of lemon juice
Pasta of your choice
Method:
Cook pasta according to packet directions.
Heat a non-stick pan, then add tofu and veggies. Sauté until starting to brown, then add tamari and a splash of water.
Keep cooking until veggies are soft, then add pasta, hummus, dill, lemon juice and spinach with another splash of water if needed.
Cook until spinach is wilted. Season to taste and serve!
