PB Stuffed Choc Fudge Cookie
This peanut butter stuffed chocolate fudge cookie (yes, you heard right!!) is a deeeelicious and incredibly nutritious, high protein single serve snack or dessert that you can whip up for yourself in less than 15 minutes!
It’s naturally sugar free and gluten free, but absolutely choc-a-block full of nutrient goodness, including over 16g of plant protein and plenty of healthy fats, magnesium, iron, vitamin E, zinc and filling fibre.
But nutrition aside, it tastes just heavenly and is super rich, decadent and satiating. Everything we want and need in a good cookie, I say!

Ingredients:
1 tbsp (10g) cacao powder
15g hemp protein powder
1 tbsp (10g) almond meal or flour
1/2 tsp baking powder
1/2 tsp cinnamon
Optional, 1 tsp stevia (if you prefer a sweeter cookie. I don’t think it’s needed!)
1 tbsp apple sauce
2 tbsp water or plant milk of your choice
1 tbsp peanut butter
Method:
Preheat your oven to 200 degrees Celsius and line a tray with baking paper.
Combine dry ingredients in a bowl, then add apple sauce and water or milk and mix to form a sticky dough.
Place half the dough onto your baking paper, then dollop the peanut butter in the centre. Place the remaining dough on top to enclose the peanut butter inside, making a dome.
Bake for 10 minutes, then remove from the oven and allow to cool slightly before eating!
Notes:
To make this recipe nut free, you can use sunflower seed meal (just grind up your sunflower seeds in a blender to form a fine meal) instead of the almond meal, and replace the peanut butter with a seed butter, such as sun butter or even tahini!
You can find hemp protein powder at most health food stores or in the health food aisle of the super market, otherwise online. I haven’t tried this recipe with any other protein powders but it would likely work just as well!
