Vanilla Breakfast Mousse
Whilst I love my smoothie bowls, it’s getting to that point in the year where eating something frozen leaves me feeling chilled to the bone for hours…so I needed an alternative to when I wasn’t feeling like oats.
Enter this divine creation: vanilla mousse! It’s super thick, light and fluffy, absolutely packed full of protein, calcium and omega 3 fats, and very filling too. The definition of dessert for breakfast!!
Another reason I love it is the fact it takes mere seconds to make, with only 3 simple ingredients. No pre-preparation and planning needed. We love to see it!
Paired with your favourite fresh fruits, some crunchy granola or nuts and seeds on top, I could think of a better way to start the day.
This recipe makes 1 serve.
Ingredients:
1/2 block (150g) silken tofu
2 tbsp (20g) vanilla vegan protein powder, see Notes
1 tbsp flaxmeal
Fresh fruit, granola and other toppings of your choice, to serve
Method:
Drain your tofu, then add it to a blender or food processor together with the protein and flaxmeal.
Blend until super smooth and creamy, then allow to sit for 5 minutes whilst you chop up your fruit. It will thicken up during this time!
Spoon mousse into a bowl and add all of your toppings. Enjoy!
Notes:
You can totally get creative with this recipe and add in some other flavouring ingredients, such as cacao powder, peanut butter, lemon or orange zest, or use a different flavour protein powder. I’m sure I will be sharing many variations of this in the near future!!
