Choc Noatmeal
Noatmeal. Also known as ‘no-oatmeal’ or a grain free, veggie-packed but still super delicious, hearty and filling porridge.
Now, I’m not a fan of replacing things with cauliflower with the aim to make everything low calorie. But this is not a low calorie recipe. In fact, it’s a very nutrient-dense one!
I had a bunch of cauliflower rice in the freezer that definitely was getting a little old, so thought to try making something delicious with it…and I believe I have very much succeeded!
Packed full of fibre, protein, healthy fats, magnesium and antioxidants, this porridge will keep you just as full and satisfied as your regular oat porridge, guaranteed.
This recipe makes 1 serve.
Ingredients:
100g cauliflower rice, I used frozen
1 cup plant milk
1 tbsp flaxmeal
1 heaped tbsp cacao powder
1/2 tsp cinnamon
1 scoop (30g) choc vegan protein powder, see Notes
1 ripe banana
Toppings of your choice
Method:
Combine cauliflower rice and milk in a pot and bring to the simmer.
Add in your mashed banana, then stir well simmering for about 10 minutes.
Stir in the cacao, cinnamon, flax and protein to combine into a thick and creamy porridge. Leave to stand and thicken for a few minutes whilst you prepare your toppings.
Spoon porridge into a bowl, add on your toppings and enjoy!
Notes:
If you want to leave out the protein powder, I’d definitely suggest using soy milk both for taste and protein content, as well as doubling the flax and cacao, and adding sweetener of choice if needed.
