Homemade Strawberry Jam
My absolute favourite jam in the entire world. It’s incredibly easy to make, low in sugar and tastes like heaven. It takes me right back to my childhood where my Mum would make strawberry jam all the time.
Perfect for toast, spooning on oats or yoghurt bowls, whatever you like your jam with!
And also a fantastic way to use up strawberries that are starting to look a little sad. Too good!
Ingredients:
2 punnets (500g) fresh strawberries, or you can use frozen
Juice of 1/2 a lemon
1/4 cup sweetener of choice (monk fruit, maple syrup, raw sugar etc)
Method:
Wash and destem the strawberries, then roughly chop and add to a pot.
Cover strawberries with 1/2 cup water, and add sweetener and lemon juice. Bring to a simmer.
Simmer, with lid ajar for at least 30 minutes or until strawberries are soft and jammy.
Remove from heat and allow to cool, it will thicken further as it cools. Once cool, transfer to a jar and store in the fridge for up to a week.
Notes:
For a smoother jam, you can purée after cooking too by blending until smooth!
