Apple Cinnamon Custard Bars
Anything apple cinnamon, but especially these Apple Cinnamon Custard Bars have my heart.
That creamy plant based vanilla custard is made with the oat milk, which makes for the perfect taste and texture custard.
Give these a try for a tasty afternoon treat or dessert, great eaten both warm or chilled.
Ingredients:
Base:
125g oat or spelt flour, or a GF all purpose mix
1/4 cup almond flour
1 tsp baking powder
Pinch of salt
1/4 cup maple syrup
1 tbsp olive oil
2-3 tbsp oat milk
Cinnamon apples:
2 large apples, diced
1 tsp cinnamon
Custard:
1 cup oat milk
2 tbsp corn flour
2 tbsp maple syrup
1 tsp vanilla extract
Method:
Preheat your oven to 180°C and line a tin with baking paper.
Add diced apples to a pan with cinnamon and a splash of water. Cook covered for about 5 minutes until soft.
Combine the base ingredients in a bowl and mix into a dough. If it’s a bit too crumbly, add a dash more milk. Press firmly into tin.
Whisk together the custard ingredients, then bring to a simmer, stirring until thickened. Allow to cool slightly so it thickens more, then whisk up again and pour over your base.
Layer the apples on top, then bake 30-35 minutes until golden.
Remove from oven and allow to cool completely before slicing up.
Notes:
Instead of oat milk, feel free to use any other plant milk of choice. I find oat and soy make the best custards as they are the creamiest.
