Coconut Lime Protein Balls
A delicious, easy high protein snack recipe that’s perfect for prepping ahead of time. I love to make a big batch to keep in the fridge or freezer for the week, for a quick energy boost.
The addition of lime zest means these taste like lime cheesecake and make the absolute perfect little lunch dessert or afternoon pick me up!
This recipe makes 6.
Ingredients:
4-5 Medjool dates, pitted
2/3 cup (60g) oats
40g desiccated coconut
1 tsp lime zest
Juice of 1 lime
2 tbsp maple syrup
1/4 cup coconut or cashew butter
1 scoop (40g) vanilla protein powder
Method:
Add all your ingredients to a blender or food processor.
Blend until a ‘dough’ forms, if too crumbly add 1-2 tbsp of water until it comes together.
Roll into 6 balls, then pop in the fridge or freezer to firm.
