Hot Cross Bun Oats
A spur of the moment creation I made up today in celebration of Good Friday, and a very good decision it was. These hot cross bun oats are just THE perfect breakfast for your Easter weekend!
These creamy, gooey spiced oats literally taste like a warm hot cross bun. They’re filling, satiating and kept me energised for hours too!
I🤩enjoyed this bowl out in the sunshine of my garden after a zoom class with my gym crew and I’m feeling very grateful for those little things that bring some joy to every day, which I think are especially important at the moment when it’s so easy to feel down and overwhelmed by everything that’s going on. Those little things (and a good bowl of oats!) make all the difference.

Ingredients:
1/2 cup oats
1 cup cashew milk
A chunk of grated zucchini (optional)
1 tsp pumpkin spice or cinnamon
1 tsp orange zest or extract
1 tbsp flaxmeal
2 tbsp vanilla plant protein powder
A small handful of raisins
Vegan yoghurt (soy, coconut etc), for the cross
Method:
Combine the oats, cashew milk, zucchini, spices, orange + raisins in a pot and bring to a simmer.
Cook, stirring, until thick and creamy, then stir in your flax and protein.
Spoon your oats into a bowl, then spoon yoghurt on top to form a cross shape, and add any other toppings of your choice - chocolate, chopped nuts etc! Enjoy!
