Chickpea Veggie Omelette
Who needs eggs when you have chickpea flour?! A great plant based alternative to eggs that is pantry-friendly and packed full of protein and fibre. Plus it genuinely tastes like an actual omelette!!
This is one of my favourite things to make for a quick lunch at the moment, and so so easy to make too. You can use any veggies that you like and have in the fridge, or you can even use frozen veggies if you don’t have any fresh ones.
It would also make a GREAT savoury breakfast!!

This recipe serves 1.
Ingredients:
1/2 cup chickpea flour
2 tbsp nutritional yeast
1/2 tsp turmeric
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 cup unsweetened plant milk of your choice
1 cup of veggies, chopped (I love mushrooms, onion, zucchini, capsicum, spinach…)
2 tbsp fresh parsley, optional
Salt and pepper, to taste
Method:
Combine chickpea flour, nutritional yeast, spices and milk. Whisk until smooth.
Chop all your veggies and fold through the omelette mix.
Pour into a a non-stick pan and cook until browned, then flip and cook the other side.
Serve! Seasoned with salt and pepper. I love adding some salad, avocado, toast or coconut sour cream and tomato salsa to serve.
Notes:
Adding a pinch of kala namak (black salt) instead of regular salt will give this omelette an even more ‘eggy’ taste!
