Almond Joy Banana Bread
Up level your snacks with this delicious and wholesome spin on your traditional banana bread ~ spiked with dark chocolate, coconut and almonds. Just YUM!
Lots of prebiotic fibre, healthy fats and some sneaky hidden veggies for good measure!
Ingredients:
3 cups (250g) oats
1 small zucchini, grated
1/4 cup (25g) shredded coconut
3 tbsp (30g) chopped almonds
1/4 cup (60g) almond or peanut butter
1 banana, mashed
2 tbsp maple syrup
2 tsp baking powder
1 tsp vanilla extract
Pinch of salt
1 1/2 cup plant milk
Handful of dark chocolate chips
Method:
Preheat oven to 180°C and line a loaf tin with baking paper.
Add oats to a blender or food processor and pulse into a course flour.
Combine oats, coconut, almonds, baking powder and salt in a bowl.
Add banana, nut butter, milk and vanilla extract to a blender and blend until smooth.
Stir wet and dry ingredients together, then fold in grated zucchini and chocolate. Pour into tin and bake for approx 40 minutes until golden and a skewer comes out clean. Allow to cool before slicing.
Notes:
Store in a sealed container in the fridge for up to a week. This recipe freezes very well too!
