Lentil Fritters
Fritters are such an easy and yum lunch. Great to meal prep, perfect for using up veggies you have in the fridge, and this version using red lentils packs a protein punch too!
I had an abundance of cabbage in my fridge, so that’s what I’ve used this time - however other veggies I love using in fritters are shredded zucchini, carrot, corn, kale…and adding fresh herbs like parsley and dill is also super delicious. Feel free to get as creative as you like!
This recipe makes about 2 serves, I usually pair them with a salad.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
100g red lentils, see Notes
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp turmeric
1 tsp dried dill
2 tbsp nutritional yeast
1 tsp baking powder
1/2 small onion, finely diced
1 cup cabbage, shredded
Salt and pepper, to taste
Method:
Add lentils to a blender or food processor and blend into a flour.
Combine lentil flour, baking powder, nutritional yeast and spices in a bowl. Add enough water to make a pancake like batter.
Stir in cabbage and onion.
Heat a non stick pan and pour 2 tbsp batter into pan for each fritter. Cook for a few minutes, then flip and cook other side until golden.
Best served with a delicious salad and some mashed avocado, hummus or tomato chutney!
Notes:
As mentioned, feel free to swap the cabbage (or add) any veggies you like, such as zucchini, carrot, corn, kale, spinach, mushrooms or fresh herbs.
Instead of red lentils or for a blender free option, swap for chickpea or lentil flour.
